Roman fruit dressing from cherries and wine
In ancient Rome, fruit sauces and dressings, cooked with wine, honey, and spices, were often prepared. One of the most famous preparations was mulsum – wine with honey, often enriched with fruit.
Since fresh fruit was not always available, they used:
preserved fruit
dried fruit
fruit reductions
Today, this role is excellently taken by frozen fruit.
Ingredients (for sauce or dessert)
300 g frozen cherries (pitted)
150 ml red wine (can be non-alcoholic grape wine)
2 tablespoons of honey
1 small cinnamon stick
a pinch of ground pepper (yes, the Romans used it!)
1 tablespoon of lemon juice
Procedure
Put the frozen cherries into a pot (without thawing).
Add the wine, cinnamon, and pepper.
Cook on low heat for 15–20 minutes to reduce the liquid.
Add honey and lemon juice, cook for another 2–3 minutes.
Remove the cinnamon and let it cool slightly.
The result is a thick, aromatic fruit sauce.
Historical Context
The Romans:
combined sweet + spicy
used wine as a base for sauces
often served fruit warm, even as part of main dishes
