Ingredients (1 loaf pan)
Wet Ingredients:
300 g bananas (thawed)
80 ml plant-based milk (almond, oat, soy)
60 ml maple syrup or agave syrup
60 ml coconut or canola oil
1 teaspoon vanilla extract
Dry Ingredients:
180 g oat flour (or finely ground oats)
40 g plant-based protein powder
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
Pinch of salt
Add-ins:
50 g chopped nuts (walnuts, hazelnuts, or almonds)
40 g chunks of dark chocolate (at least 70% cocoa)
Preparation Method
Preheat the oven to 180 °C and line a baking pan with parchment paper.
Mash the thawed bananas well with a fork until smooth.
Add the plant-based milk, syrup, oil, and vanilla, and mix well.
In a separate bowl, mix all the dry ingredients.
Gradually mix the dry ingredients into the banana mixture.
Gently fold in the nuts and dark chocolate chunks.
Pour the batter into the pan and optionally add more nuts or chocolate on top.
Bake for 45–55 minutes, until a toothpick comes out almost dry.
Allow the bread to cool slightly before slicing.
Tips for a Perfect Result
Frozen bananas make the bread even more moist and naturally sweet.
- If you want the bread to have a slightly crunchy texture, sprinkle pieces of freeze-dried bananas on top before baking.
